About
Commensal Fermentation was formed by Michael Mathis and two of his long time friends from different parts of his life. Finding this fitting for his friends as to whom he still shares his table with, Morgan and Piotr also embody this mentality regarding their passion for people, time and place. Commensal Fermentation is a veteran and minority owned brewery, in Portland, Oregon. With over 10 years of professional brewing experience, a BS in microbiology, AS in laboratory science, and formal brewing education from the American Brewers Guild, Michael was ready to take the leap to fulfill his dream in opening a brewery with two friends with different backgrounds.
