This year they are celebrating their 33rd year in business. Founder Geoff Latham, a graduate of Oregon State University's Agricultural Business Management School, founded the business in 1990 and started out by selling rabbits from the back of his Ford Escort hatchback to a few eager chefs. Some of their earliest supporters included Philippe Boulot, Cathy Whims, Vitaly Paley and Greg Higgins, chefs who were all leaders in the local, seasonal farm to fork Northwest food movement. They now have a team of 20 employees, including a full service commercial USDA food service butchery & processing facility, and carry over 1000 items & cuts curated for the most discerning chef, food service, and retail customers.
