May 2014 Second cart opened in Hillsdale, day one. Their Story Phat Cart started with one idea: bring the food they grew up with to the people they love. When they opened Phat Cart in 2012, it was a food cart, small, personal, and packed with a few recipe ideas. Today, Phat Cart is a brick-and-mortar cafe near PSU with a full bar, a second cart in Hillsdale, and a menu that's still evolving.
