About
Their passion for bread grew from a shared love of nourishing people with fresh, high-quality ingredients and a fascination with zymology—better known as fermentation. With 25 years of professional brewing experience, he mastered the art and science of Saccharomyces cerevisiae —yeast. His curiosity led him to explore sourdough and naturally leavened breads, experimenting with brewing malts, rye, and wheat to cultivate unique starters. In 2018, after years of refinement, their proprietary starter was born—their “first-born” and the heart of every loaf they bake. Three years later, they moved to Oregon—and thanks to you, their amazing community, they’ve been growing ever since.
